Nuts are a fine crop, and when they are ripe, they tend to be harvested starting from October till the end of the year especially in the south. Hence, the farmer should always be careful when harvesting.

To have nuts that have an ideal taste, you have to nurture your crop from the beginning. When their season comes, make sure that you have treated the trees with pesticides and herbicides to prevent the crop from being infested. Also, make sure that you have applied manure to the trees to give them good health.

Harvesting is the most sensitive part, and if you make a mistake at one point, you might completely alter the taste of the crop. When the tree is mature, you can harvest the nut and remove the outer shells very carefully. Ensure you follow all procedure as outlined.

When the pecans are fully ripe, you will notice that their outer coat start breaking by itself. This is a perfect way of checking whether the nuts are ripe or not. Shake the tree vigorously so that the ripe nuts will fall. The unripe nuts will be left on the tree to ripen thus you will not waste them. You will then be required the crops and prepare them for drying.

Inspection of these nuts is then done, and the damaged ones are removed. They are then dried to give them a golden color. When the nuts fall, their appearance and quality start to decrease especially when they are still wet. Therefore, it is very important to gather them immediately after harvesting so that you can dry them. This way, their quality will remain.

You must store the crop in a cool dry and air tight place during drying. The process takes 2-3 weeks and you have to turn them so that the underneath ones can also dry. Once they are dry, you will find that the shells crack or break neatly. You can then remove the shells and leave the nut fro 2-3 days before processing them.
